Paleo Hummus

Who doesn’t love some hummus? While normal hummus is nearly Paleo, this recipe using cauliflower instead of chick peas is totally Paleo and just as delicious!

Here’s what you’ll need:

  • 1 cauliflower head, cored and cut into roughly 1 inch pieces
  • 2 teaspoons olive oil
  • 2 teaspoons cumin
  • ¼ teaspoon sea salt
  • 1/8 teaspoon black pepper
  • ½ cup tahini
  • 4 garlic cloves, minced into a paste
  • Juice of 1 lemon
  • 1/8 teaspoon paprika

And here’s how to make it:

  1. Preheat oven to 500 F°
  2. Toss cauliflower in a large bowl seasoning with olive oil, cumin, sea salt, and black pepper
  3. Transfer seasoned cauliflower to baking sheet and distribute pieces evenly
  4. Bake for 25-30 minutes, or until cauliflower is brown and tender
  5. Using a blender/food processor, blend baked cauliflower, tahini, garlic, and lemon juice until smooth
  6. Sprinkle paprika over hummus

Makes 2 cups
