Paleo Brownies

Now, I know what you’re thinking. “BROWNIES!? I thought we were supposed to be eating healthier!”

And you know what, you’re right. But it’s only natural for you and your kids to have hankerings for those old treats sometimes. So my solution is to have Paleo-friendly treats ready to go!

Now, I certainly don’t think you should keep a big stock of brownies around the house all the time but for an irregular treat, these Paleo brownies are a delight!

Here’s what you’ll need:

  • 1 egg
  • 1 cup almond butter
  • 3/4 cup natural cocoa powder
  • 1 and 1/4 cup of raw honey or light agave syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon chocolate extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

And here’s how to make it:

  1. Pre-heat oven to 325 F° / 160 C°.
  2. In a mixing bowl, mix egg, vanilla extract, chocolate extract, salt, and baking powder. Set aside.
  3. Turn on stove to low heat
  4. On stove, warm up honey or agave in a pot but don’t boil it.
  5. Add cocoa powder and stir until nice and smooth. (Careful not to burn it!)
  6. Remove pot from stove and thoroughly mix in contents from the mixing bowl in Step #1.
  7. Prepare an 8 by 8 inch baking pan by greasing it with oil(ideally coconut) or line it with foil/parchment paper.
  8. Pour contents from pot into pan. (Make sure you thoroughly mixed the contents in Step #5)
  9. Bake for 45 minutes.
  10. Let it cool for several minutes before serving.
  • Store them in an airtight container to keep them fresh longer.
