Chicken Fajitas

Living in California, we absolutely love Mexican food. One of the hardest things about switching to Paleo was saying good bye to Mexican food. The kids were thus awfully surprised when these fajitas turned up on the dinner table!

Here’s what you’ll need:

  • 2 pounds boneless, skinless chicken breasts cut into slices
  • 6 diced garlic cloves
  • 2 teaspoons cumin
  • 2 teaspoons oregano
  • 2 teaspoons chili powder
  • 2 teaspoons sea salt
  • 2 tablespoons coconut oil
  • 1 sliced red onion
  • 4 sliced red bell peppers
  • Juice of 1 lemon
  • Juice of 1 lime
  • 3 heads butter lettuce, root removed, washed and dried
  • Guacamole
  • 1  jar of salsa

And here’s how to make it:

  1. Mix garlic, cumin, oregano, chili powder, and sea salt in  large bowl
  2. Add chicken and toss until chicken is coated in spice mixture
  3. Heat coconut oil in large pan over medium-high heat
  4. Saute onions for 4 minutes
  5. Add chicken to pan and cook for approximately 12 minutes or until chicken is just a little under cooked
  6. Just before chicken is done, add red peppers, lemon and lime juice. Stir and cook for 3 more minutes
  7. Add red peppers, lemon juice, and lime juice to pan and continue cooking everything for another 3 minutes
  8. Serve over lettuce with guacamole and salsa on the side
